Waffle Omelet

This waffle omelet is so simple. Just whip some eggs up in a bowl with your favorite omelet ingredients and pour it in your waffle maker. Just like that you have breakfast, carb free.

We have been making waffles non-stop since quarantined. And let me tell you, there are only so many recipes I can come up with from my empty cupboards and fridge. Let’s just say I’ve been getting pretty creative. This one, however, is as far from creative as possible. I simply added some just-about-rotten pico de gallo, and arugula, whipped it all together and threw it in the preheated waffle maker.

This recipe does have potential to be creative, even though my version is not. Add in some chips. Cheese, maybe. Some snacks you’ve found buried deep inside your pantry. Veggies of all sorts would work. Top it with chili, avocado, sour cream, the sky’s the limit.

  • 2 eggs

  • Whatever damn ingredients you want, such as pico de gallo and arugula as pictured.

Let’s Get Started

  • Preheat and lightly grease your Waffleye Waffle Maker
  • In a medium bowl, add eggs and omelet ingredients.
  • Mix together and pour into waffle maker.
  • Cook for about 3 minutes or until done.
  • Top with your favorite toppings and enjoy.
